Classic Chicken Curry




4 cups of boneless & skinless chicken in bite-sized chunks (bone-in ok)
1 packet of EasyCurry's Chicken Curry spice mix
1 medium onion (finely chopped)
1 tablespoon of crushed ginger
˝ tablespoon of salt (or to taste)
1-cup of water
˝ tablespoon of crushed garlic chili peppers optional (for fiery curry)
2 tablespoons of vegetable oil
Serves 4 - 6

Heat oil in a non-stick pan on medium heat.Add onion, stir, and cover. Sauté until slightly golden brown. Add rest of ingredients except water, stir to mix well, and cover. Simmer for 15 minutes. Stiroccasionally. Add water, stir, and cover. Simmer for 20-30 mins or until chicken is tender but not falling apart. Stir occasionally. (Note: Curry may need an extra ˝ cup of water if the sauce is too dry.) Turn off heat. Serve curry with rice, pasta or Indian breads, or wrap with tortillas. Garnish with cilantro. Serve with your favourite vegetable on the side. Enjoy!
