Cock-A-Leekie Soup

Ingredients
1 1/2 bn Leeks, diced
2 Onions, diced
3 Stalks Celery, diced
1/4 lb Butter
4 c Chicken Stock
2 lb Potatoes, diced
Half-and-Half
Salt to taste
Pepper to taste

Method

Saute the leeks, onions, and celery
in the butter until soft. Add the
chicken stock and potatoes and
simmer for 1 1/2 hours. Put the mixture
into a blender or food processor,
taking care because it is hot, and
blend. Before serving, reheat mixture
to boiling point and add half-and-half
until it is the consistency of a thick
cream soup. Salt and pepper to
taste.
