Thai Curry 


750 gms chicken breasts, skinned, deboned, cut into 1-inch pieces

500 gms mixed vegetables (broccoli, carrots, water chestnuts and red peppers)

2 tbsps oil

5 tsps five-spice powder

1/2 tsp garlic, crushed

1/2 tsp ginger, julienned

1 tsp pepper powder

1 tsp chilli powder

1 tbsp soya sauce

1 cup chicken broth

2 tbsps vinegar

3 cups coconut milk

salt to taste

Preparation :-
Heat oil in a vessel. Add the five-spice powder, chilli powder, garlic, ginger, pepper powder and soya sauce. Fry well.

Add the chicken pieces and cook till done.

Add the chicken broth, vinegar and coconut milk. Stir well. Bring to a boil, lower the heat and simmer for about half an hour.

Add the vegetables and cook till done.

Serve with plain rice.
