Mango Ginger Pickle

Scrape and chop Mango ginger (A type of seasonal ginger) into thin round pieces. 
Mix salt and juice with that. 
Heat little oil, add mustard seeds, sliced green chillies (1 or 2) and mix with mango ginger. 
Allow it to soak for one day and then use. 

Fresh green pepper can be made like this. 
Omit green chillies as pepper itself is more spicy. 
Squeeze more lemon juice and use one day after soaking. 
Chop capsicum into small pieces. Repeat the above procedure. 

Mix carrot, cauliflower, cabbage, fresh peas together. (Chop-into very fine pieces) season as mentioned above.
