Preparation of Fried chicken:

Heat the oil and fry the dried chillies till crisp and brown, and cut them in small pieces. Next, fry the chicken and onions in the remaining oil and season with garlic, salt and soya sauce. Cover and simmer for five minutes. Blend in the cornflour mixture. Stir until the sauce has thickened. Add the cashewnuts and the fried chillies. Put in box, date, label and freeze. When ready to eat, thaw for 3 to 4 hours and then heat very gently. Spoon into a serving dish and garnish with lemon and tomato wedges, sprinkle green coriander leaves. Serve with hot rice.
